are scsi hard drive necessary for servers? Or can I just use regular 7200 rpm Sata drives?

SCSI is not necessary.
In fact, you don’t see it much anymore. SAS you’re starting to see more, but plain old SCSI is going the way of the dinosaur.
What you do need to do is make sure you get a “server rated” drive for the machine. Server drives typically remain “spun up” either continually or for much longer periods of time than normal desktop drives. As such, you physical components of a typical desktop drive may fail prematurely when placed in a server.
And, as always, keep good backups.
